Wine naturally contains sulfites, and Scott carefully monitors sulfur dioxide (SO₂) levels in every batch. Using commercially available test kits, such as the Accuvin Free Sulfur Dioxide (SO₂) Test, along with lab analysis, he ensures each wine falls within the lower end of the acceptable range based on its pH level. Some wines require slight adjustments, while others do not.
